Italian Caprese Wrap with Fresh Basil, Tomato and Prociutto

This Wrap is so easy to prepare and it fulfilled my craving for a Fresh Caprese Salad and and Sandwich at the same time!

We have harvested some of our Roma Tomato’s from the plant that is producing like crazy.  Some people do not believe that you can grow Tomato’s in containers, but honestly here in Arizona where is is hotter than normal it is nice to move them around  for the best mix of sun and shade.  The one plant has produced at least 25 Roma’s since we we brought it home 1 month ago from..Costco!  Yes, Costco had big plants and this one came home with us.

The Basil plants (3 of them) are also going crazy.  I have them in the shade and use the fresh leaves every other day it seems.  As I was assembling the Wrap, I decided to roll the leaves together and slice into thin strips, worked out perfect!

Layered and drizzled with Balsamic Vinegar and Olive Oil for a wonderful Finish

 The flour tortilla was warmed on a non-stick skillet for about 2 to 3 minutes per side over medium heat, then layered the filling in this order:  Fresh thinly sliced Mozzarella, Prosciutto, (I used 3 slices), Chopped Roma Tomato’s (3), then about 6 Basil leaves rolled and thinly sliced.  Drizzle some Balsamic Vinegar and I misted some olive oil over the top.  Fold like Burrito and cut in half.

Caprese Wrap

Flour Tortilla
Fresh Mozzarella Cheese 4-5 thin slices
5-6 Fresh Basil Leaves
3 Medium sized Roma tomato’s Chopped
3 Slices Prosciutto Ham
Splash of Balsamic Vinegar
Spray Olive Oil

Chicken, Bacon, Parmesan Ranch Wrap

This wrap was like eating a Salad topped with chicken and Ranch dressing along crunchy bacon bits!

I have been craving this for the whole week and it has been a crazy one, that I just had to make this the first thing this morning.  I purchased a Rotisserie Chicken but I would have easily cooked up a chicken breast and sliced it up in to strips or chunks.  The best dressing for this is “Marie’s Parmesan Ranch Dressing” found in the Produce section of the Market.  It is full of wonderful flavors and I use it often not only on Salads but in Wraps like this one or as a veggie dip.

Chicken, Bacon & Ranch Wrap

1 Spinach Tortilla (I used Mission Brand)
Handful Shredded Rotisserie Chicken

1 Table Spoon diced red bell pepper
1/2 diced medium tomato
I/2 shredded carrot
8 leaves of baby spinach
1/4 cup shredded iceburg lettuce
2-3 table spoons Marie’s Parmesan Ranch Dressing
1 slice cooked crumbled bacon

Layer and roll up tortilla and cut in half and serve

Turkey Bacon Club Wrap

I have been craving a Club Sandwich for about a week now and I have not given in to my craving because I am trying to cut back on alot of bread.  I picked up some sun dried tomato wraps the other day and decided to give them a try with turkey, bacon and lettuce filling.

1 Sun Dried Tomato Tortilla Wrap
1-2 Tbl Whipped Cream Cheese
1 Tbl Diced Red Bell Pepper (if yu like the added flavor, I do!)
1-2 Tbl of Crumbled Bacon
A couple of shakes of Italian seasoning
5 Slices of Roma Tomato (Thin)
Baby Spinach Leaves
Iceberg or Romaine lettuce leaves
2 Thin Slices of Baby Swiss Cheese
Thinly Sliced Turkey Breast to Cover Filling


Assemble as shown.  I start with a sheet of wax paper to prepare the wrap on and when I have finished with the sliced turkey over the top, roll the wrap as tightly as you can and the roll the whole wrap in the wax paper and fold the ends.  Refrigerate about 30 minutes and the unroll and slice in half.  I sliced mine in about 1 1/2 inch slices to make it easy to eat on the run or just not as messy.  Yum!  I will definitly make this again to take to the office for lunch.

Spread cheese, add peppers, seasoning and sliced tomato's

This was so good that I will make another tonight to grab in the morning for tomorrows lunch!
